Biscuit Topped Casserole

I made another great recipe today that I copied from my mom’s recipe box.  This casserole always goes over well!  I made another batch of cole slaw to go with it, and it was a great combination.

Biscuit Topped Casserole

1 1/2 pounds ground beef (I used ground round)
1 cup chopped onions
8 ounces cream cheese, softened
1 10.5-ounce can cream-of-chicken soup
1/2 cup milk
1/2 teaspoon salt
1/4 cup ketchup

For topping:

1 3/4 cups all-purpose flour
1/2 cup wheat germ
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup shortening*
1 cup milk

Directions:

1. Brown ground beef with onions in a large skillet.  Drain excess grease.  Remove from heat, and stir in cream cheese, soup, milk, salt, and ketchup.

2. Pour into a 9 x 13-inch casserole dish.

3. Bake at 375 degrees Fahrenheit for 20 minutes.  While baking, prepare topping:

Stir together flour, wheat germ, baking powder, and salt.  Cut in shortening until mixture is like coarse crumbs.  Lightly mix in milk.

4. After the 20 minutes of baking, spoon biscuit dough on top of the meat mixture in the casserole dish.  Bake 20-25 minutes longer or until golden brown.

*I have made this with vegetable shortening as well as coconut oil.

It’s a really nice, sunny day here, as you can tell!

  2. This looks like a perfect recipe for college students! So simple to make!

    However, what kind of ketchup is that in your photo?!?! We need to send you over some Heinz Ketchup!
