Morning Goodness

I’m not sure what to call this other than “Morning Goodness,” because it’s morning, and it’s goodness.  I have been trying to find new ways to use fresh mushrooms, because of the sale at Aldi that I’ve been raving about.  I found the inspiration for this recipe here.  My version is slightly different, and here’s how I did it.

Morning Goodness

1 egg

fresh mushrooms

cheese (Mozzarella, Swiss, or whatever you prefer!  Today, I used yogurt cheese.)

salt, pepper

butter

garlic or granulated garlic

toast or a toasted bagel

Directions:

1. First, slice the mushrooms (about 4 nice sized mushrooms for one serving) and fry them in a skillet with a small amount of butter, garlic, salt, and pepper.  When they are tender, set them aside on a plate and place the cheese (grated or sliced) on top to melt.  If it doesn’t melt fast enough for you, help it out in the microwave.

2. Fry the egg in same skillet until it’s how you like it.  I don’t like my eggs very dippy, but they really look pretty that way.  I add salt and pepper to my egg after it’s fried.

3. Toast your bagel or bread and slide the mushrooms and cheese on top.  Put the egg on top of that and you’re good to go.

This is so easy and soooo delicious. 🙂

Bonus: my coffee yesterday:

– 3/4 cup 1% milk

– 1 shot espresso

– ice

This is probably not something I’ll be trying again… it needed sugar so badly. 🙂

  1. I’ve never had yogurt cheese! What is it like?

    • It’s really hard for me to describe. 🙂
      It’s plain; I didn’t use any with things added (like vegetable yogurt cheese, etc.). I got mine at Heini’s Cheese Chalet in Millersburg, Ohio. It’s more mild than swiss, but not mild like colby (in my opinion).
      I hope that makes sense. 🙂

    • I hadn’t either!!
      I was looking for mushroom recipes, but then had stopped and was looking for good “breakfast” recipes and this is what I found. How perfect is that? 🙂

    Mushrooms + Aldi = 2 of my favorite things! I often eat mushrooms with breakfast, but I haven’t heard of yogurt cheese before. I’ll have to do some research 🙂
