Last night before bed I was really hungry, but instead of opening the fridge for some immediate gratification, I looked through my recipes and decided what to make for lunch today.
I picked my mom’s recipe for sloppy joes which, in my opinion, is the best I’ve ever had. As I’ve mentioned before, my mom follows recipes exactly. She said that she really liked how her sloppy joes tasted usually, but sometimes they weren’t as good as other times, so she wrote down exactly how she made them and perfected her recipe. I got some ground chuck out of the freezer to thaw for today.
We visited my parents yesterday, and they picked some corn from their garden for us! It was the perfect side to go with the sloppy joes.
2 1/2 pounds ground round (I used ground chuck)
2 giant onions, diced
1/2 cup ketchup
1/8 cup mustard
2-3 tablespoons brown sugar
1 can cream-of-celery soup
1/2-5/8 teaspoon salt
1/4 teaspoon black pepper
1/4 cup water (if needed)
1. Brown beef and onions in a large skillet. When done, drain the excess grease. (If you are using ground round there may not be any grease to drain.)
2. Add all other ingredients. Stir together, and heat to boiling. Turn heat down, and simmer for 10-30 minutes, depending on how much time you have.
