Making my tuna salad sandwiches Saturday
So how did I do sticking with my menu? Really well! I was surprised at how well it worked, actually. I felt much more prepared when fixing meals the last few days. The only thing I did “wrong” was eating chicken chili for two nights instead of one, and making biscuits instead of having grilled cheese.
It was delicious.
I am prepared to share another menu with you, but it includes a lot of leftovers.
That’s fine, though – I love cooking like that!
Right now, we have leftover Chicken Chili, Chicken a la King (and rice), and orange jello with carrots and pineapple. Combined with fruit and veggies, that’s enough for a few meals already, which is great because I work quite a few hours this week.
Fruit this week:
Oranges (we have three left)
Bananas
Cantaloupe
Monday
Breakfast:
- Fried eggs, toast, and fruit
Lunch:
- leftovers
Dinner:
- leftovers
Salmon ready to be baked
Tuesday
Breakfast:
- Fried eggs, toast, and fruit
Lunch:
(Currently undecided: will update if it’s exciting!)
Dinner:
- lettuce salad
- Baked Salmon
- wild rice
- possibly homemade wheat bread (depending on my energy level)
- Fuzzy navels & whatever the guys want
(We are having dinner guests)
Wednesday
Breakfast:
- Fried eggs, toast, and fruit
Lunch:
- leftovers
Dinner:
- Homemade Tomato Soup & Grilled Cheese Sandwiches (Since we never made this meal last week!)
- vegetable (probably broccoli or a salad)
Thursday*
Breakfast:
- Fried eggs, toast, and fruit
Lunch:
- leftovers
Dinner:
- Homemade Enchiladas (but with corn tortillas)
- vegetable
Snacks: Cottage cheese, yogurt, celery, chocolate, fruit, leftovers, cereal, milk
Things I would like to make this week if I get a chance:
- Soup with ground turkey or beef, lima beans, green beans, kidney beans, and who knows what else? ![]()
- Homemade granola
* I know that Thursday is Valentine’s Day and this is a very simple meal. We are planning to celebrate Valentine’s Day on Friday with another fancy meal at home (to be announced but might look very similar to Tuesday’s meal) and another couple.
