YUM.
That word basically sums up this delicious and simple meal! It was something I put into my 3-day menu I posted yesterday, but had never actually made before. This recipe is definitely going to happen again! It’s like something you would get at Chipotle or Qdoba, except for the much nicer price tag! So here’s how I made the tacos…
Beef, Black Bean, and Corn Tacos
Soft corn tortillas
1/2 pound ground beef*
1-2 garlic cloves, minced
1/2 medium onion, chopped
1 15-ounce can black beans, drained
1/2 teaspoon salt (to taste)
1/2-1 cup frozen corn (or fresh-cooked or canned)
homemade fresh salsa
chopped lettuce
shredded cheese (mozzarella, cheddar, or really any kind!)
optional: sour cream, Greek yogurt, queso, and/or guacamole
Directions:
1. In a medium skillet, fry the beef with the onion and garlic. When beef is browned, add the black beans, salt, and corn, and cook on low heat for a few minutes.
2. Serve with warmed tortillas topped with the beef/been/corn mixture, salsa, optional toppings, then lettuce and cheese.
*I used ground chuck. You can use more beef if you would like, but I like the idea of “stretching” my beef by also using beans and corn.
