I experimented with making grilled/BBQ chicken last week, and was 95% pleased with how it turned out. Today, I tried again and was 100% pleased!
I don’t have a “real,” outside grill. I do, however, have a panini grill (similar to a George Foreman grill). Last time I made chicken breast on the panini grill, it took quite a while to cook them all the way through, and they were really dark on the outside before they were done inside.
Today when I prepared the chicken, I cut it horizontally, so each breast was half as thick as before. They cooked perfectly, and more quickly as well!
Earlier today, I seasoned the chicken and let it sit in the fridge until it was suppertime.
I dumped in a little of this, a little of that -
- McCormick “Barbeque” seasoning (is this cheating???)
- Italian salad dressing
- Sweet Baby Ray’s Hickory & Brown Sugar BBQ sauce
- Salt
- Pepper
- Vegeta seasoning
- Granulated Garlic
I also like to add some more BBQ sauce after it’s grilled.
This chicken was so amazing! It was so tender – easy to cut just with a fork, and super delicious. I’m definitely going to make it again soon!
Side of mashed potatoes with sour cream and cheese… can’t really go wrong!
